I need some vegan recipes ideas?

Dorethea Beaston: I have three simple, healthful and satisfying recipe ideas for you to try. I make these all the time at home!1. Sweet potato fries + Caribbean bean burgersFor the fries:3 medium or 2 large sweet potatoes, sliced into thin strips1 tablespoon olive oil (or 2, the more the better, but if you're health conscious go with 1)1/2 tsp cumin1 tsp curry powder (yellow or red, spicy or mild, whatever you like)1/4 tsp cayenne (powdered, obviously)1/2 tsp salt1/4-1/2 tsp red pepper flakesBoil the potatoes for three minutes. Place in a large bowl and toss with oil and spices. Bake at 205 degrees Celsius, or 400 degrees Fahrenheit, for about 30 minutes, flipping halfway. If you have a shitty oven like me, they'll need more time.For the burgers:15 oz. boiled black beans15 oz. boiled black-eyed peas1 green or red bell pepper, sliced into tiny pieces2 cloves garlic, minced small1 shallot or 1/2 small onion, chopped into tiny piecesjuice of 1 small or 1/2 large lime1/2 tsp ! salt1 tablespoon curry powder (again, whatever kind you want)1/3 cup bread crumbs (make sure they're whole wheat and vegan)1-2 tablespoons olive oilMash the peas and beans in a medium bowl using a fork or potato masher. Stir in the veggies, lime and spices. Stir in the bread crumbs last, and add the oil until the mixture is sticky and easy to form into patties. Weigh it, subtracting the weight of the bowl it's in. It should be about 1000 grams, but if it isn't that's fine. Just divide it by 8. Form 8 patties. Each one should weigh about 125 grams, or an eighth of the total weight of all the ingredients. Line a baking sheet with parchment paper and place the patties on the paper. Place it in the oven with the sweet potatoes and bake until the sweet potatoes are done, or 17-20 more minutes.Serve the fries and veggie burgers together with kimchi, ketchup, mustard, lettuce, or whatever you want! The burgers are best when served on a nice homemade or bakery bought bun. Enjoy!Rec! ipe 2: Peanut tofu and rice1 block super firm high protein tof! u (I prefer Wilwood tofu, it's the best on the market!), cubed into 1.5 cm cubes3 tablespoons smooth, organic, natural peanut butter (if there is any added sugar the sauce will taste bad)2 tablespoons low or reduced sodium soy sauce1 tsp Mirin (the secret ingredient...shh!)1-2 tsp rice vinegar2 tablespoons filtered water1/4 tsp sriracha sauce1 tablespoon corn or potato starch, or all purpose flour (this thickens the sauce so it coats the tofu well)1 medium onion, sliced thin1 bell pepper, sliced thin3 green onions, sliced8 medium mushrooms, sliced thin2 cloves garlic, minced1.5 cups frozen broccoli, if you have it1 cup brown riceBoil the rice in 1 1/2 cups water over high heat. Once it's boiled, cover and simmer for 30 minutes.Make the sauce by whisking everything together until thick and combined. Coat the tofu by tossing well in a covered bowl. Place this on a nonstick baking sheet or a regular baking sheet coated in olive oil and bake at 250 C/400 F until very crispy. Ju! st leave it alone until everything else is done! Now, place the onions in a pan with a little coconut oil and saute for three minutes. Throw in the garlic and saute until fragrant. Add bell peppers, broccoli and mushrooms and cook for a few minutes. Add in scallions and turn heat to low or sim. Cover and let this sit until the rice is done. Take out the tofu, turn off the rice and serve everything together, drizzled with rice vinegar!Recipe 3: The best Quinoa you will ever have1 cup quinoa, rinsed thoroughly1 3/4 cups water2 bay leaves1 1/2 tsp thyme2 tsp rosemary1/2 tsp saltRoasted or sauteed veggies (whatever you have on hand works. this is just for serving with the quinoa)Toast the quinoa in a nonstick pan on low-medium heat for 5 minutes, until it's a bit browned. Pour in the water and place the herbs in the water. Bring to a low boil, turn heat to low-medium, and cook for 15 minutes. Serve with veggies, fresh herbs and salt.I hope this helped! Cole Desher: How about a stew or soup? If you have veggie broth, it could make a nice little dinner. If you don't have broth, you can use water as your base and flavor it well. You could also make a puree of the garlic, onions, carrots, tomatoes and leeks. Bake the potatoes and use the veggies as a topping for your potatoes. Wash and clean the tomatoes, Cut off the tops and scoop out the seeds and core. If you have rice cook it and set aside. Finely chop all your other ingredients and stuff your tomatoes with it (sort of like stuffed green peppers). Cook in the oven or in a lage pot on the stove until the tomatoes are just done....Show more

Irvin Guiles: Vegetarians don't eat animal flesh but still eat eggs, dairy, honey, etc. Vegans do not eat anything that comes from any living thing.
